Can I use the Moog One PITCH wheel to control parameters other than pitch?

Yes. You can assign the PITCH wheel to any parameter that can be selected in the modulation window. 

 

To do so, press the MOD button beneath the soft knobs on the center panel. This will cause the display to show a list of modulation lanes. Use the large encoder knob to select a new modulation lane and then press it down to edit the parameters of that lane. Use the first soft knob to scroll through sources and select PITCH WHEEL. You can now assign it to any destination, as well as applying controllers or transforms using the other soft knobs. 

 

Note that if you want it to stop controlling the pitch, you will have to go into the MORE window of the LHC and set the PITCH BEND UP and PITCH BEND DOWN amounts to zero.
